PERSON IN CHARGE

In any food service establishment, someone must be in charge during all hours of operation. The Person In Charge (PIC) is responsible for knowing all food sanitation rules and the policies for your establishment. The PIC is responsible for providing you with information you need to perform your job.

The PIC is usually a manager or supervisor. It can also be anyone who is given the authority to oversee other employees and knows all food sanitation rules and policies.
